Tangy tomatoes laced with garlic make this sensational soup a family favourite all year round


Ingredients

Method

  1. Preheat oven to 180°C.
  2. Chop the garlic and shallots, then place in a baking dish along with the tomatoes, rosemary and thyme. Coat in olive oil and place in the oven for around 15-20 minutes.
  3. Transfer the contents of the baking tray into a large pan, add the vegetable stock and simmer over medium heat for around 15-20 minutes.
  4. Add the balsamic vinegar, basil, salt and black pepper to taste and simmer for a further 5-10 minutes.
  5. Place in a food processor and blend to your desired consistency.
  6. Serve and garnish with Parmesan cheese.
