Roasted tomato and garlic soup

About
Tangy tomatoes laced with garlic make this sensational soup a family favourite all year round
Method
- Preheat oven to 180°C.
- Chop the garlic and shallots, then place in a baking dish along with the tomatoes, rosemary and thyme. Coat in olive oil and place in the oven for around 15-20 minutes.
- Transfer the contents of the baking tray into a large pan, add the vegetable stock and simmer over medium heat for around 15-20 minutes.
- Add the balsamic vinegar, basil, salt and black pepper to taste and simmer for a further 5-10 minutes.
- Place in a food processor and blend to your desired consistency.
- Serve and garnish with Parmesan cheese.
