Method

  1. Cook quinoa as per packet instructions. Transfer to a bowl and cool completely.
  2. Combine quinoa, tomato, cucumber, onion, parsley and mint in a bowl.
  3. Whisk lemon juice, oil, garlic and spices together until combined. Season as desired.
  4. Add 2 tbs of dressing to 1 cup of tabouli and toss through. Spoon onto lettuce leaves and roll up, folding in ends. Pack into an airtight container if not serving straight away.
