Pancakes with fresh fruit coulis

Fluffy pancakes with tangy, fruit sauce make the perfect afternoon snack


Ingredients

Method

  1. Add the fresh fruit and maple syrup to a saucepan and simmer until fruit has softened for 4-5 minutes.
  2. Whish the flour and eggs together to make to a smooth texture.
  3. Add the milk and mix to a smooth finish.
  4. Brush a non-stick frying pan with a little vegetable oil and place on a medium to high heat.
  5. Pour some mixture into the pan and swirl around to cover the base.
  6. Cook for 1 minute or so until edges begin to crisp.
  7. Flip the pancake over and cook the other side. Once cooked place the pancake on a serving plate.
  8. Add a little of the fruit coulis to half of the pancake and fold in half, and then into a quarter.
  9. Serve with a dust of icing sugar and a drizzle of maple syrup.
