Method

  1. To make the ginger syrup, in a medium saucepan, boil the water. Add the ginger allowing it to dissolve. Lower the heat and add the honey, lemon zest and orange juice. Set aside to cool.
  2. In a parfait glass, dollop a big spoonful of yoghurt, then sprinkle the granola on top followed by any fruits you desire in layers.
  3. When serving, add the ginger syrup on the side to sweeten. Add dark chocolate chips or any other toppings to make it your own.
