Forget the giant bird in the centre of the table and instead try this Greek cheese-inspired turkey wrap

Method

  1. Before you begin, preheat the oven to 175°C.
  2. Slice the turkey breast down the middle and lay it flat on a work surface. Sprinkle oregano, cumin, salt and pepper on the inside of the turkey. Rub in if desired.
  3. Arrange the fresh spinach leaves in a layer on one half of the cut turkey breast and top with a layer of feta cheese.
  4. Repeat layering with spinach and feta cheese. Fold the other turkey breast half over the feta layer so the filling is sealed.
  5. Wrap the entire turkey breast with lengths of turkey bacon and place in a baking dish, Season with salt and pepper.
  6. Cook in the oven until the meat is no longer pink in the centre and the juices run clear, usually for around 30-40 minutes.
  7. Turn on the grill and finish the wrapped turkey until bacon is crisp on each side. Let the turkey rest for 10 minutes before slicing.
