Think courgettes are bland? Think again! With lashings of cream and a burst of chilli, this seasonal starter will impress your guests
Method
- Peel the potatoes and chop along with the onion, garlic and courgettes.
- In a large pan, heat the olive oil then add the chopped onion, garlic, chilli, courgette and potatoes and cook for five to six minutes.
- Add one litre of chicken stock and bring to the boil, then reduce heat and simmer for 20 minutes until the potatoes have softened.
- Remove from the heat and then blend using a hand blender until smooth.
- Return to the pan and stir in the cream along with the salt and pepper, then serve.
