Use crisp Jumbo Gala from Washington Apples to make the perfect festive dessert this season


Ingredients

Method

  1. Preheat oven to 180°C. Slice the top of the apple off, and then use an apple corer to scoop out the core.
  2. Next, in a medium-sized mixing bowl, mix the coconut sugar, rolled oats, pecans, cinnamon, nutmeg, and two tablespoons of melted coconut oil.
  3. Fill each apple with the cinnamon-granola mixture. Add in the apple you removed with the corer and mix a little.
  4. Place the stuffed apples in a deep baking dish, topping each apple with any of the remaining cinnamon-granola mixture, then drizzle the remaining melted coconut oil on top of each apple, along with an extra sprinkle of cinnamon.
  5. Pour about 3cm of water into the baking pan, around the apples and cover with a piece of foil.
  6. Bake for about 35 minutes, uncovering for the last 5 minutes so that the granola topping gets nice and brown.
  7. Serve with caramel or toffee sauce or with scoops of vanilla ice cream on the side.
