#1 Use as a topping for a baked apple.

#2 Add to muffin mixture for a crunchy texture and glazed top.

#3 Make granola bars. These are so good, and can be as simple as granola, honey, peanut butter and chocolate, mixed and baked for 10 minutes.

  1. Preheat your oven to 160°C.
  2. Mix together 1kg rolled oats with 200g mixed chopped nuts, 200g pumpkin seeds and 100g desiccated coconut.
  3. Mix 75g olive oil and 75g honey and combine with the mix above. Keep stirring until all ingredients are lightly coated.
  4. Spread onto baking sheets and place in the oven for about 15 minutes - stirring occasionally to ensure it doesn’t burn. Cook until lightly golden brown.
  5. Allow to cool completely and add 100g dried cranberries.
