Popeye was definitely on to something, smashing a can of spinach with every meal!

Filled with antioxidants, including vitamin C and beta-carotene, as well as lutein and zeaxanthin — a duo that acts like sunscreen for your eyes and guards against macular degeneration, it can be a challenge to get it into little ones.

However, with just 120g of fresh spinach leaves providing almost double the daily requirement for vitamin K, which plays an important role in cardiovascular and bone health, it's worth the effort.

Pack the good stuff into these muffins and they'll forget it originally looked like green veggie leaves. Research suggest children are far more likely to try a food they are unsure about if they cooked with it themselves.

Kids, you will need these 11 things:

Ask the children to write down the things they need and give them the responsibility of doing the shopping for the recipe. This will also give them a sense of pride in the process.

100g cheddar, grated

1 tbsp dried thyme

2 eggs

5 tbsp Greek yoghurt

150g plain white flour

Follow these steps carefully:

1 Ask an adult to help you set the oven to 180°C

2 Place the spinach in a blender or food processor and blitz until shredded (but not pureed to a liquid).

3 Put the spinach in a bowl. Add the grated cheese and dried thyme.

4 Crack the 2 eggs into a bowl and mix along with the yoghurt.

5 Sieve the flour and baking powder over the bowl then mix well to combine

6 Spoon into a muffin tray and bake for 20-25 minutes before allowing to cool.
