A mug of deliciousness, simple enough for kids to make

It's not always easy to steer them away from processed foods, especially when you're looking for a quick fix after school and before activities.

But we're pretty confident this clean, healthy, chocolate chip mug cake recipe is going to rock their world.

It's high in protein, low in sugar but, more importantly, it’s chocolate; it's dessert; and it's actually good for you.

This recipe works even if your child is following a gluten-free diet as you can easily swap out the spelt flour for either coconut or almond versions.

Keep it clean

Follow these simple ingredients and it's easy to keep recipes clean from too many sugars and unwanted "nasties".

Butter: Try and go for full fat, organic butter. You can also use coconut oil in place of the butter.

Good quality cocoa: A household staple. Choose organic, unsweetened cocoa powder.

Maple syrup: While it is still a sugar, so should be sued in small amounts, it's a natural sugar.

Spelt flour: On a Clean Eating diet, you can choose from a wide variety of whole grain flours and spelt is one of them. otherwise go for the gluten-free options. (You can also make this recipe with regular, self-raising flour).

Baking powder: Try and make sure it is aluminium and GMO-free.

Vanilla extract: It's a better option than vanilla essence and the more natural the better.

Eggs: Choose free range, organic eggs.

The serving is to make a large mug cake and is probably a bit too much for a young child, however, a teenager or child with a larger appetite will devour and happily go for seconds!

How to make it?

The instructions are easy enough for kids to follow alone if they can read.

  1. Grab a large mug and put one tablespoon of butter (or coconut oil), half a tablespoon of cocoa powder and a generous tablespoon of maple syrup in the bottom.
  2. Mix together until smooth.
  3. Add three tablespoons of flour, half a teaspoon of baking powder, a quarter of a teaspoon of vanilla extract and one egg to the mug.
  4. Mix again (carefully) until well combined and smooth.
  5. Microwave for 50 seconds.
  6. Keep a close eye on the cake. As soon as it rises above the mug top, it’s a sign that’s it’s a couple seconds from being ready.
