Dry roasted cashew nut pesto

This deliciously creamy cashew nut pesto makes the perfect accompaniment to pasta, chicken or even spread on some crackers. Using Goodness Foods Dry Roasted Cashew Nuts with pepper, also adds an extra kick to the mix. The cashew nuts add a buttery, creamy texture to this fun twist on classic pesto.

Ingredients

100g Goodness Foods Pepper Dry Roasted Cashew Nuts

2 garlic cloves

50g Parmesan cheese

Green tops of 8 carrots

Large bunch of basil

150ml extra virgin olive oil

Method

1 To begin, finely grate the Parmesan cheese in a bowl and set aside.

2 Cut the green tops from the carrots and roughly rip them in half. Place in a food processor with the cashew nuts, garlic and Parmesan cheese. Blitz for 10-20 seconds.

3 Scrape the ingredients away from the edges. Add the basil and blitz again for a further 10-20 seconds.

4 Then, leaving the processor running, slowly drizzle in the oil until all the ingredients are combined. Season to taste.

5 Serve mixed into fresh pasta and garnish with fresh basil and extra grated Parmesan cheese. Alternatively, store in a jar and keep in the fridge for up to one month.
