Cooking up a storm in the kitchen every day at Meatco Souk Madinat, Chef Andzej shares his past, present and inspirations for the future

Where did you grow up?

I grew up in small town in the South East of Poland.

Did you eat your veggies?

Yes! I really loved eating my greens when I was a child.

When did you know you wanted to be a chef?

When I realised the food in the school canteen was terrible and I made it my mission to change this!

What is your favourite food memory?

Preparing for a Christmas Eve dinner with my family in Poland. It's always such a magical time of the year with great food.

Was your training difficult?

I trained under chefs in many restaurants in London. Training was very difficult, especially the long hours and the constant demands of head chefs.

What inspires you?

Visiting food markets, travelling, and checking new trends in food industry.

Favourite kitchen equipment or gadget?

Has to be my knife and steel.

Best piece of advice you would give a home cooking enthusiast?

Follow your taste, recipes and imagination!

Best cooking tip for a novice just getting into the professional industry?

Enjoy cooking even when everything is going wrong.

What’s the most popular dish at Meatco?

Steaks. They are the best in Dubai in my opinion.

What products should we be buying in the UAE to best make Meatco style meals?

For me the best steaks you can buy are available here in Dubai. Stick to Australian beef.

Mushrooms, tomatoes, pasta, cheese and apples.

Who in the food world do you most admire?

Marco Pierre White.

What is your favourite food to cook with?

Beef - always!

The most challenging ingredient to work with?

Fish and seafood.

What do you like to eat when you’re at home?

Homemade Polish style soup.

Are there any foods you just don’t like?

Simple. Sweetcorn.

Favourite cookbooks?

Old French culinary cookbooks are great for diversity.

Where do you see yourself in five years?

Running my own restaurant somewhere exotic!

What is going to be the next big thing in the food world?

Nobody knows - chefs are very creative and at the moment the food industry is more art than just cooking and putting food on the plate.

What do you do for fun?

I like watching football, playing computer games and reading.

Where is your favourite place in the world?

The Dominican Republic.

What do you love most about your job?

Preparing and cooking food for people who appreciate it.

If you had just one wish, what would it be?

To open a beach restaurant in the Dominican Republic.

What would be your ‘Last Supper’ meal? Your ‘Death Row’ meal, as the late Anthony Bourdain put it?

It would have to be my father's dumplings - they are the best!
