Use a pre-cooked rotisserie chicken and your favourite tasty USA Washington apples to whip up this simple salad


Ingredients

Method

  1. Core and chop the Washington apples into thin slices, or cubes if you prefer. Thinly slice the white and green parts of spring onions and set aside.
  2. Divide the mixed greens, cooked barley, chicken pieces, cubed avocado, apple slices, mandarin, spring onion, nuts/ sunflower, chia seeds between your plates, trays or pasta bowls.
  3. Prepare the salad dressing by pouring the balsamic vinegar and olive oil into a small mixing bowl. Add the salt and pepper, whisk immediately prior to serving and drizzle over each bowl. Enjoy.
