About
Fresh bread, bursting with spinach, eggs, and salmon, this no-fuss brekkie treat is all you've been waiting for
Method
- Take the fresh bread slices of your choice (also works with brioche buns) and toast until golden.
- Meanwhile, stir-fry 100g baby spinach with 1 tsp water for around a minute in a nonstick frying pan over a medium-high heat. When it has wilted, transfer the spinach to a plate and season well.
- Wipe out the pan, then heat 1 tbsp olive oil over a medium heat. Crack in your eggs and fry for 4-5 mins until the whites are set. If you prefer, boil the eggs in a pan of water for 8 minutes until hard. Peel and cut in half. Set aside.
- Divide a 120g pack of smoked salmon between the bread base and top with the spinach and eggs. Drizzle over 100g of hollandaise sauce and garnish with the finely chopped dill and a pinch of paprika.
- Add some halved tomatoes and chopped avocado for some extra calories and flavour.
