Ingredients

Method

  1. In a pre-heated oven at 180C, cook a turkey for 1-2 hours, depending on the size. Remove from the oven and set aside to cool.
  2. Place the turkey carcass in a large pan (break the carcass to fit into the pan if needed) then fill the pan with water, ensuring the turkey is completely covered.
  3. Season with salt and pepper, add the bay leaf, and bring to a boil, then simmer for two hours.
  4. While the carcass is simmering, chop the onion, carrots (if using), and celery.
  5. After two hours, remove the foam residue which has risen to the surface of the stock, then remove the carcass and the bay leaf from the pan.
  6. Place the cooked turkey pieces, chopped pears (skin on), onion, carrots, celery, pearl barley, and thyme to the broth and simmer for a further 45 minutes.
  7. Season with additional salt and pepper, as well as sliced lemon if needed. Serve warm.
