A somewhat unlikely combination provides an explosion of flavour in this tangy lunchtime favourite


Ingredients

Method

  1. Preheat the oven to 200°C.
  2. Remove the leaves and chop the cauliflower, then place in a baking tray and drizzle with the olive oil, rub half of the herbs into the cauliflower then place in the oven for 45 minutes.
  3. Place all of the dressing ingredients in a bowl and add 50ml warm water. Using a hand blender, blend all the ingredients together and season with salt and pepper.
  4. Remove the cauliflower from the oven and transfer to a serving bowl. Add the pomegranate, raisins, the remaining herbs and pine nuts and mix together.
  5. Top with the dressing and serve.
