Method

  1. Chop potatoes into bite-sized chunks or cubes. Place the potatoes in a large pan of boiling water and cook for 10 minutes until just beginning to go soft. Do not overcook.
  2. Meanwhile cook the peas in boiling water for 2 minutes. Drain both pans and set aside.
  3. In a large bowl combine the yoghurt, mayonnaise and lemon juice and zest then season. Add the chopped potatoes, peas, red onion, spring onions, capers, dill and parsley. Toss gently to coat.
