Get barbecue season off to a flying start with this tasty side dish

Method

  1. Cook the potatoes in a large pan of salted water until just tender, about 10-15 minutes. Whisk together the olive oil, mustard and lemon juice in a large bowl.
  2. Drain the potatoes and leave to cool for five minutes, then tip into the bowl along with the spring onions and finely-chopped chives.
  3. Toss everything with mayo until the potatoes are well coated. Leave to cool. The dish will keep in a covered container in the fridge for up to two days. Add some raw, chopped red onion for a splash of colour and zing of flavour.
