The real underdog of any great barbeque, serve these organic lamb stacks with a simple dressing


Ingredients

Method

  1. Roughly mix together the lamb, onion, one garlic clove, fresh mint, ground coriander, a pinch of salt and freshly ground black pepper, until well combined. Shape the mix into 4 thin patties, roughly 1cm thick, and rub both sides with a little oil.
  2. Preheat the grill or barbeque to high. Place on the grill for 4-5 mins on each side until cooked. Lamb can be served medium rare, if desired.
  3. To make the tzatziki, grate the cucumber into a tea towel and squeeze out any excess liquid. Transfer the cucumber to a bowl and add the remaining ingredients. Mix and refrigerate until ready to serve.
  4. Finally, mix the mayonnaise with the remaining garlic and spread on the ciabatta roll. Add the green salad leaves, a burger, tzatziki, and fresh cucumber to serve.
