Crispy leaves served with tangy fresh peach

Ingredients

75g Black olives
2 Peaches
1 Blood orange
10 Lettuce leaves
4 tbsp Balsamic dressing
25g Chia seeds

Method

Wash all the fruit thoroughly and peel and chop where necessary. Set aside.
Peel peaches (if desired), remove stones and slice into bite-sized pieces. Combine peaches, roughly-torn lettuce leaves, sliced oranges and black olives in a large bowl.
Toss with the dressing of your choice and sprinkle chia seeds on top.
