        Method

        1. Preheat the oven to 180˚C and prepare your ingredients.
        2. In a bowl, combine flour, butter, ginger, cinnamon and bicarbonate of soda until the mixture is crumbly.
        3. Add the sugar, syrup and egg and knead until you get a firm pastry mix.
        4. Using a rolling pin, roll out the pastry to about 5mm thick. Make sure both the rolling pin and the pastry are well dusted with flour, so the dough doesn't stick to the pin.
        5. Use gingerbread men cookie cutters to cut out gingerbread man shapes.
        6. Place the gingerbread men on a greased or non-stick baking tray.
        7. Bake until golden; usually about 15 minutes, but check after 10-12 if using a fan-assisted oven. When baked, remove from the oven and cool on a wire rack.
        8. Using the icing and sprinkles, go wild with your decorations.
