Ingredients

Method

  1. Peel the fresh beetroot and grate (coarsely). Finely chop the greens (leaves and stems). Place all parts of the beetroot in a large pot, and pour over the water or vegetable stock.
  2. Add the lemon juice, cover and bring to the boil. Simmer for 5 minutes, then remove from the heat and leave to cool completely.
  3. Once the beet mixture has cooled, add the remaining ingredients, season to taste and stir thoroughly.  Refrigerate for at least 30 minutes (and up to 4 hours) before serving.
  4. Cut the boiled egg in half and float in the middle of the cold soup. Season further as desired.
