Fennel smoked salmon salad

Choppy flavours play against the fresh taste of smoked fish


Ingredients

Method

  1. Remove the smoked salmon from packaging and chop into medium pieces or strips.
  2. In a medium bowl, combine chopped smoked salmon with baby gem lettuce, fennel and dill.
  3. Zest half the mandarin and toss with contents already in the bowl. Allow to stand for five minutes.
  4. Peel the remaining pieces of mandarin and add to the top of the salad.
  5. Pour white vinegar and lemon juice over the salmon mix and gently combine. Add the wholegrain mustard and mix well before serving.
