Ingredients

Method

  1. Chop the onion, celery and garlic and set aside.
  2. In a large pan, heat the olive oil then add the onion and celery and fry for 5-8 minutes, add the garlic and cook for a few more minutes.
  3. Add the beans, chicken stock, pepper, spinach and thyme then bring to the boil. Reduce heat and simmer for around 15 minutes.
  4. Remove from the heat and blend using a hand blender.
  5. Stir in the lemon juice and serve, garnished with parsley.
