Ingredients

Method

  1. Preheat oven to 180°C. Chop chicken and vegetable.
  2. Arrange the cashew nuts on a baking tray and place in the oven to roast for five minutes. Set to one side.
  3. Take half of the chopped chicken in a large bowl and season with salt and pepper.
  4. Heat one tablespoon of vegetable oil in a large pan and add the seasoned chicken, stirring continuously until it has browned on the outside but not completely cooked through. Place on a plate to stand.
  5. Add the remaining tablespoon of vegetable oil to the pan then add the remaining unused chicken, garlic, and the white parts of the spring onions. Fry until the chicken is lightly browned. Add the first batch of chicken to the pan. Reduce the heat, add the rice vinegar and cook for until evaporated.
  6. Add the hoisin sauce, soy sauce and 60ml water, keep tossing the chicken until it is cooked through. Remove from heat, stir in the green part of the spring onions, cashew nuts and and leave to stand. Garnish with chilli flakes (optional) and serve with rice.
