About

This Emirati breakfast dish is made with vermicelli, Spanish saffron, dried fruits and nuts from around the world. It has a mellow, buttery taste and resembles a French-style omelette


Ingredients

Method

  1. Heat the oil in a pan and add half of the raw vermicelli. Lightly fry the vermicelli noodles until they turn golden brown.
  2. Next, add a large volume of water to boil the fried vermicelli. Once the water starts to boil, add the rest of raw vermicelli and cook. Drain and put to one side.
  3. Place the butter, cardamom, sugar and rose water in a new pan and heat gently. Add the vermicelli, mix and cook.
  4. Make the omelettes, chop into strips and serve on top. Garnish with the chopped or whole almonds, cashews and pistachio nuts as you desire.
