Method

  1. Beat the egg with sugar, honey, vanilla, and oil.
  2. Add bananas and yoghurt until fluffy. In another bowl, combine flour, baking soda, ginger, and cinnamon powder. Combine both mixtures in an electric mixer or whisk vigorously.Place ingredients in a buttered baking pan and cook for 40 minutes at 180°C. Use a Bundt pan for the best results.
  3. Allow to cool for at least 20 minutes before serving. Flip over onto your serving platter. Garnish with fresh bananas if desired.
