Ingredients

Method

  1. Before you begin, preheat the oven to 200°C. Spread the Parmesan shreds evenly on a baking tray lined with parchment paper and bake for 8-10 minutes. 
  2. Slice your turkey and cook in a tbsp of olive oil in a shallow frying pan. Cook for 6 minutes on each side until each piece is no longer pink in the middle.
  3. Remove the baking tray from the oven and allow the Parmesan to crisp at room temperature. Take the turkey from the pan and place on a sheet of kitchen roll, allowing the oil to drain.
  4. In a bowl, toss the julienned apple red USA with the lemon juice until completely coated.
  5. Combine the sliced cabbage, turkey pieces, dates (optional), and apples in a serving bowl. Roughly break the Parmesan crisp webs and place them gently on top of the salad.
  6. For the dressing, add the remaining ingredients in a clean bowl and combine them using a hand blender.
