USA Pear and chicken salad

Add tender cubes of sweet potato in this tasty sautéd chicken dish

Method

  1. Heat some olive oil in a pan over a medium heat. Chop the chicken breasts into bite-sized pieces and begin to sauté the chicken. Cook for 8-10 minutes until the chicken is no longer pink inside.
  2. Sprinkle with a little salt and pepper to taste and set aside. Boil some cubed sweet potato (optional) in a pan of water for 8-10 minutes, until cubes are just becoming tender to touch with a fork.
  3. Slice the USA pear and set aside. Layer handfuls of baby spinach, chicken, sweet potato (if using), pear in a bowl.
  4. Shake the vinegar, mustard, coriander, salt and pepper in a jar. Drizzle over the salad. Top with walnuts if desired.
