Green peas pair with flavourful roasted garlic tones for a starter or light lunch favourite


Ingredients

Method

  1. Preheat the oven to 180°C.
  2. Slice the head off the garlic to reveal the top of all the cloves, place on tin foil and drizzle with olive oil. Fold all the edges of the foil together to create a sealed bag and then place in the oven for around 30-40 minutes.
  3. Place the garlic cloves, peas and vegetable stock in a small saucepan, bring to the boil and simmer for around 15-20 minutes.
  4. Use a hand held blender to puree the soup.
  5. Garnish with Parmesan cheese, salt and black pepper, chilli flakes and serve.
