Method

  1. Heat the oil in a wok or large frying pan over a medium-high heat and fry the ginger and garlic for 30 seconds, stirring occasionally. Add the prawns and cook for 4-5 minutes, stirring occasionally, until they turn pink and are cooked through.
  2. Add the soy sauce, apple cider vinegar and spring onions. Stir to combine, adding ketchup, if you like. Remove from the heat and serve with boiled rice and pak choi, if desired.
