Forgotten a loved one's special day? Make these easy jam tarts in a flash and nobody will ever know


Ingredients

Method

  1. Put the flour, butter, and a pinch of salt in a bowl and rub them together with yourfingertips. When breadcrumbs form, stir in the egg and vanilla seeds
  2. Add 1 tbsp of cold water, then start to bring the dough together in one lump with yourhands. Add 1 more tbsp of water if it’s not coming together. Wrap in cling film and chill inthe fridge for 30 mins.
  3. Heat the oven to 180°C. Butter a 12-hole tart tin, then dust your work surface with flour.Roll out the chilled pastry until it’s about the thickness of a coin. Use a straight or flutedround cutter to cut out 12 circles, big enough to line the holes in the tin.
  4. Spoon 1-2 tsp of your chosen jam filling into each one. Cut out little pastry hearts andplace them on the top.
  5. Bake for 15-18 mins or until golden and the filling is starting to bubble a little. Leave tocool in the tin for a few minutes then carefully transfer to a wire rack to cool completely.
