Ingredients

Method

  1. For coconut relish, in pan heat ghee, add in cinnamon stick, bay leaf to infuse their flavor in ghee.
  2. Add grated coconut, stir continuously on a low flame.
  3. Add chardonnay vinegar and brown sugar.
  4. Gradually add a spoonful of water now and then to prevent the coconut from burning.
  5. Add chilli flakes to the above coconut relish
  6. Cook until the coconut is cooked and the sugar caramelizes, remove from flame and allow to cool.
  7. Stir in the coconut cream to the above coconut relish when it cools down.
  8. For spice gourd, heat oil in a pan, add rampa leaves and sauté them for a few minutes on slow flame.
  9. Add spice powders and salt cooking it further for a couple of minutes.
  10. Add gourd and cook it until done.
  11. Add coconut milk to finish.
  12. For baked fish, make a marinade with onion, chilli, ginger, garlic, curry powder, curry leaves, lemon juice and salt. Blend together to a paste.
  13. Clean and wash the fish, marinate the fish well.
  14. Wrap it in banana leaf securely.
  15. Place the pot under the ground and burn charcoal, place the fish in a perforated container so that it's not in contact with the charcoal, cover the pot with lit and enclose the entire pot with sand to maintain the heat which will act as an oven.
  16. When fish is cooked which will take almost 35-45 minutes, serve hot with boiled rice, coconut relish and spice gourd.
