Method

  1. Melt the butter, milk and two tablespoons of the oil in a pan. Mix the ingredients together over a low heat.
  2. In a separate bowl, mix together the flour, baking powder and half of the caster sugar.
  3. Next, transfer the melted butter mixture into the bowl with the flour and sugar and mix well.
  4. When combined, separate the mixture and shape into small balls.
  5. Heat the litre of oil in a deep pan on a high heat until . Carefully place the balls into the mixture and cook for a few minutes, turn occasionally until cooked through. Once cooked, remove with a slotted spoon and place on kitchen paper to drain.
  6. Remove the seeds from the vanilla pod and mix them together with the remaining caster sugar.
  7. Take each doughnut and roll in the vanilla and sugar, ensuring each is covered evenly.
  8. Place the raspberries in a bowl, squirt some orange juice over and then mash to make a puree.
  9. Serve the doughnuts warm with the raspberry dip.
