Ingredients

Method

  1. In a saucepan over a medium heat, combine the sugar, cornstarch, and salt. Slowly add in milk, whisking constantly until all of the sugar is dissolved.
  2. Increase to a medium-high heat and bring the mixture to a boil. Next reduce the heat a little and cook, whisking constantly for two more minutes.
  3. Remove the pan from the heat and stir in the butter, peanut butter, and vanilla. Whisk until smooth and creamy.
  4. Mix the yoghurt with the chia seeds and set aside. Layer granola, yoghurt and chia, peanut butter pudding into jars. Cover with plastic wrap (making sure to press down on the plastic wrap so it touches the pudding), and let it chill in the refrigerator for at least an hour.
  5. Serve chilled with whipped cream on top.
