La Baleine exclusively sources this sea salt from their own Mediterranean preserve. It is naturally crystallized by the sun and sea breezes in the protected waters of Aigues-Mortes. Use this coarse grind for rubs, roasting and finishing. Coarse crystals provide more texture than fine crystals, yet they are soft and dissolve quickly, giving a burst of clean, light, salty flavor with each bite
