Sweet lamb chops
Method
- Add olive oil to pan and heat over a medium to high heat. Season the lamb chops on each side with salt and pepper to your personal taste.
- Once the pan is hot, sear the chops on each side for two minutes and then remove from pan and let rest to one side.
- Turn the heat down to medium low. Add minced garlic to the pan and cook for one minute making sure not to burn it.
- Put the pomegranate kernels in a blender and blitz briefly. Whisk the mashed pomegranate, brown sugar, balsamic vinegar, cayenne pepper, and salt and pepper. Add the mixture to the pan and allow the sauce to thicken a little.
- Add the chops back into the pan, baste with sauce and continue to cook the chops until they are cooked to your liking. Remove chops from the pan and place on serving platter. Garnish with parsley and serve.
