Creamy courgette & chilli soup

About

Think courgettes are bland? Think again! With lashings of cream and a burst of chilli, this seasonal starter will impress your guests

Ingredients

1 tbs Olive oil
1 Onion
1 Small red chilli
1 Garlic clove
4 Large courgettes
2 Large potatoes
100ml Vegetable stock
175ml Cream
to taste Salt and cracked black pepper

Method

Peel the potatoes and chop along with the onion, garlic and courgettes.
In a large pan, heat the olive oil then add the chopped onion, garlic, chilli, courgette and potatoes and cook for five to six minutes.
Add one litre of chicken stock and bring to the boil, then reduce heat and simmer for 20 minutes until the potatoes have softened.
Remove from the heat and then blend using a hand blender until smooth.
Return to the pan and stir in the cream along with the salt and pepper, then serve.
