Caramelized onion & goat cheese tartlets recipe

These are great for a buffet or party, tasty bite sized tarts with a divine caramelized onions and cheese topping

  1. Preheat oven to 180 degrees celcius
  2. Heat some olive oil in a large pan, then add the onions and cook for about 30 minutes until caramelized. Ensure you stir regularly
  3. While the onions are cooling, take a small bowl and add the goats cheese, black pepper and stir together until soft and spreadable 
  4. Take the puff pastry and spread the goats cheese mixture accross the tart, then add the onions. Place in the oven to bake for 25-30 minutes or until the pastry is golden brown
  5. Leave to cool until it is cool enough to handle, then cut into required sizes

Olive Oil 2 tablespoons
Onions - chopped 3
Salt to season
Goats Cheese 225g
Black Pepper 1/2 teaspoon
Frozen puff pastry 1 pack
Fresh Thyme 1 teaspoon
