Warm potato, bacon and mushroom salad

A perfect side dish for chicken, this is comfort food at its best


Potatoes 750g, halved
Shallot 1, finely chopped
Garlic clove 1, crushed
White wine vinegar 1 tbsp
Extra virgin olive oil 21/2 tbs
Bacon rashers 2, trimmed and roughly chopped
Mushrooms 12, halved
Baby spinach 120g
Chives 1 tbsp, chopped

How to cook

  1. Cook the potatoes in a large saucepan of boiling salted water for 10-12 minutes until just tender then drain.

  2. Meanwhile, whisk together the shallots, garlic, vinegar and 1 tablespoon of oil in a large bowl. Add the warm potatoes, toss to coat, then set aside to absorb, while you cook the bacon and mushrooms.

  3. Heat a non-stick fry pan over medium-high heat. Add the bacon and dry-fry for 2 minutes or until crisp.

  4. Remove and add to the salad bowl.
